If you are familiar with tzatziki this simple homemade recipe is probably an exciting find. If you aren't familiar with tzatziki, you are in for a real treat. You can enjoy it as a dip with pita bread or the edible scoop of your choice. It's also a wonderful, creamy sauce that makes a great addition to all kinds of dishes.

Tzatziki Ingredients

16 ounces plain greek yogurt* 2 cucumbers - peeled, seeded and diced 2 tablespoons olive oil 1/2 lemon, juiced (1/4 cup) 4 cloves garlic, peeled Salt and pepper to taste 1 tablespoon chopped fresh dill (optional)

Tzatziki Directions

Combine all ingredients in food processor or blender and process until smooth. Refrigerate for at least one hour to allow the flavors to combine.

*For a thicker tzatziki remove some of the liquid from the yogurt by hanging it in a thick cheesecloth. Put the yogurt in the center of the cheesecloth and gather up the corners around it to form a ball. Tie the cheesecloth corners to a wooden spoon. Hang the yogurt inside a pot, using the wooden spoon across the top of the pot as a hanger. The pot will then catch the escaping liquid. Put the pot in the refrigerator overnight. In the morning there will be clear liquid in the bottom of the pot and a thickened ball of Greek yogurt "cheese" to use in your tzatziki.
