Sometimes all you want is an easy healthy snack. These spinach cheese balls are just the trick and a great alternative instead of chips and spinach dip. Have fun with this super-simple and healthy recipe that just happens to be be good for you.

Spinach Cheese Balls Recipe

You will need : 1 7 ounce package of frozen spinach, thawed, drained and chopped. 3 eggs ½ cup Grated cheddar cheese 1 cup Panko bread crumbs ¼ cup coriander Salt & Pepper to taste Directions: In a mixing bowl, mix the spinach, eggs, cheese, coriander, and breadcrumbs until well combined. Add more breadcrumbs if mix is too wet to form into balls. Roll mixture into 1-inch balls, and place on a parchment paper lined cookie sheet Bake at 355 for 15-20 minutes, until golden brown.
