Spicy Roasted Chickpeas

There is nothing really wrong with snacking as long as the snack is healthy, right?  The difficult task  can be finding the right healthy foods to snack on,  instead of reaching for the quick processed snack filled with empty calories. The secret is to have snacks prepped ahead of time.  This recipe for Spicy Roasted Chickpeas is easy to make ahead and will keep for about a week  in an air tight container.

Chickpeas are high in fiber, making them a great alternative snack to chips. They come out of the oven a little chewy, and as they cool they get a bit crunchy.

To make roasted chickpeas you will need:

2 15 oz cans of chickpeas (aka garbanzo beans) 2 tbl olive oil 1/2 tsp salt 2-4 tsp of your choice of spices, (garlic powder,onion powder, cumin, sweet paprika, ancho chili powder, curry powder or thyme)

Directions: Pre-heat oven to 400 Drain, rinse and dry the chickpeas Toss with olive oil and salt Roast in oven for 20-30 minutes, shake the pan every 10 minutes ( they are done when golden & a bit dark, crispy on the outside and soft on the inside) Toss them in the spices and serve while still warm.

These also make a great salad topping in place of croutons.
