MEATLESS MONDAYS JUST GOT EASIER Meatless Mondays are popular for a variety of reasons, one being it's healthier for you. Finding a great recipe the family will love can tricky, though. This lentil & quinoa taco recipe is perfect for Meatless Mondays. Your kids won't even miss the meat.

Slow Cooker Lentil & Quinoa Tacos

Ingredients: 2 cups of water 1/3 cup of black lentils 1/3 cup of brown lentils 1/3 cup quinoa 4 cloves of garlic, minced 1/2 tsp chili powder 1/2 tsp smoked hot paprika 1/2 tsp cumin a pinch of cayenne pepper Salt and Pepper to taste Corn or flour tortillas

Directions: Put it all in the slow cooker and cook for 6-8 hours on low. It's done when the mixture is not watery.

Serve it with toppings of your choice.
