Easy Gluten Free Tomato Soup Recipe

The soothing comfort of creamy tomato soup gets even better in a gluten-free variation packed with nutrition.

3 tbsp olive oil 2 tbsp butter 1 large onion chopped 2 cloves of garlic minced 2 tbsp all-purpose gluten free flour 2 tsp dried basil 2 tsp dried thyme 4 cups organic, low-sodium vegetable broth 56 oz can crushed tomatoes Sugar to taste ½ tsp kosher salt ½ tsp black pepper Garnish: cilantro, chives, or fresh basil

In a large Dutch Oven heat the oil and butter over low to medium heat. Add in the onions, and garlic, stir for two minutes until soft. Add in flour and stir. Add in the thyme and basil and cook for 2-4 minutes. Add in the broth, tomatoes, sugar, salt, and pepper. Bring to a simmer, stirring occasionally. Reduce heat and cook for 30 minutes. Use an immersion blender or Vitamix Blender to puree the soup. If you opt for the blender, puree the soup in small batches. Return soup the pot, season with salt and pepper if needed.
