Quinoa Salad Recipe
This is a great recipe to have or take as a party dish! I had a bunch of friends over last week and its a light and easy
meal to pick at, plus its really high in protein! Its also an easy meal to pack and take on the go if your running errands all day.
2 cups cooked quinoa, cooled
2 pepper, 1 red and 1 orange
2 cans organic black beans
2 can (non GMO) corn (or fresh)
1 cup of cilantro
1/4 cup olive oil
Juice of 1 Lime
2 tbsp cumin
Pinch of Red Pepper Flakes
Cook quinoa in 4 cups of boiling water, covered, for about 20 minutes. Let cool.
Chop pepper, cilantro, jalapeño and add to corn and beans
Whisk olive oil, lime juice, salt/pepper. cumin and red pepper flakes.
Add quinoa to bean and veggie mixture and top with dressing and salt/pepper. Serve at room temperature or cold.
