Quinoa & Black Bean Burgers

When you want a burger, but would rather skip the meat, you can make these quinoa & black bean burgers instead. They are gluten free, low fat, and vegan. Best of all there are only 9 ingredients.

You will need: 1 cup black beans, divided ½-cup cooked quinoa 2 tbsp. flax meal, divided 3 tbsp. water 2 tbsp. hemp hearts ¼ cup salsa of your choice Salt to taste 2 tbsp. almond flour ¼ tsp ancho chili powder

Directions: Start by preheating the oven to 400F. In a med. bowl, smash the ½ cup of black beans with a fork. Mix in the rest of the black beans, the quinoa, and 1 tbsp. of flax. Set the bowl aside. In a small bowl, mix the 3 tbsp. of water with the other 1 tbsp. of flax. Set it aside to let it thicken. Fold in the remaining ingredients including the flax & water mixture. Spray a baking sheet with non-stick spray. Then form 5 burger patties and place on the baking sheet. Bake for 30 minutes at 400F, and flip the patties after 25 minutes.
