Pork, Quinoa with Peas and Cumin Roasted Carrots with Basil-Walnut Pesto

Neil Stanford:  This dish was absolutely awesome, awesome, awesome.... It didn't take that long to cook and the prep was not that long either.

Total time around 40-45 mins. This excludes the brining time of 2 hours... (Do not skip this step, it makes a difference). There was enough for 4 people.. Seay's plate was measured for the 21 day fix.

I got extra points and lovies from Seay... She loved it...

The best Pork in the world EVER..

1st we brine the pork steaks..

Brining Ingredients: 8 cups water 3 tablespoons salt 2 garlic cloves, whole 1/2 tablespoon coconut aminos, I used a splash of white wine. 1 bay leaf 1 teaspoon whole coriander seeds 1 teaspoon whole cumin seeds 1 teaspoon whole black peppercorns 2 lbs pork shoulder steaks

Brining Directions:

1. Put water in a large ziplock bag and add the salt, garlic, coconut aminos, bay leaf, coriander seeds, cumin seeds, and peppercorns. Let the salt dissolve.

2. Add the pork steaks to the bag. This will look gross; ignore it.

3. Put the bag in the fridge and forget about it for 2 hours.

4. Remove the bag from the fridge; ignore that it looks even grosser.

5. Rinse the pork well. Think about something else as you do this so as not to notice that you’re holding raw PIGGY.

6. Let steaks dry.

Spice Blend Ingredients: 1 tablespoon ground cumin 1 tablespoon curry powder 1 tablespoon chili powder 1/2 tablespoon ground allspice 1/2 teaspoon ground cinnamon 1 teaspoon ground black pepper 2 tablespoons extra virgin olive oil

Spice Blend Directions: 1. Combine all ingredients in a small bowl and mix well with a fork. Preheat a gas grill on high heat, with

the lid closed, about 10 minutes.

2. Coat the piggy steaks with the mixture; massage and pat it on lovingly. You want the steaks pretty densely coated.

3. Place BABE on the preheated grill, close the lid, and cook for 4-5 minutes. Flip the steaks, cook for an additional 3-4 minutes with the lid closed, until the pork is looking awesome.

The smell is amazing.

Cumin Roasted Carrots

Ingredients and directions:

1 pound fresh carrots

1/2 tablespoon Cumin

1/4 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 teaspoon black pepper

1 1/2 tablespoon olive oil

1/2 lemon, a few leaves of fresh parsley and mint, minced for garnish

1. Preheat oven to 400, cut carrots length ways about 1/4 inch thick.

2. Mix the cumin, cinnamon, salt, pepper and olive oil in a bowl with a fork.

3. Combine carrots and seasoned oil in large bowl; toss to coat. Spend time tossing... Tossing is fun and you want to make sure the carrots are coated well.

4. Spread in single layer on papered baking sheet.

5. Roast carrots until tender and lightly caramelized, turning carrots over once, 15-20 minutes.

6. Remove from oven, squeeze lemon over and sprinkle with the chopped parsley and mint. They look and smell amazing!!!!!!

Cumin Quinoa and fresh Garden Peas

Ingredients and directions:

2 cups quinoa.. Mega healthy grain

4 cups of water

10 oz garden peas

2 teaspoon ground cumin

1. Bring the 2 cups of quinoa and 4 cups of water to a rapid boil in a large saucepan. Bring temp down to simmer, once water has all but absorbed and a spiral look is noticed, the quinoa is ready.

2. Drain any remaining water and add peas and cumin, stir in.. Peas will heat from the hot quinoa.

Basil and Walnut Pesto

Ingredients and directions:

2 cups fresh basil leaves

1/2 cup fresh parsley

1/3 cup extra virgin olive oil

3 cloves garlic

1/3 cup walnuts

1/2 teaspoon salt

1/8 teaspoon ground black pepper

1. Place all ingredients in a food processor or a blender (all we had was a blender) and blend to desired consistency. Allow flavors to meld for about 20 minutes before eating. Store in an air tight container in the fridge.

Presentation and Measurements for the FIX... (My plate and Seay's plate)

2. Place a mound of the quinoa on the plate (1 yellow container)

3. Place the pork steak or steaks on top of the quinoa (2 red container)

4. Add the spiced carrots along side ( 1 1/2 green container)

5. Dollop the pesto either on top or alongside the steak ( 1/2 blue container)

Eat it all up... Very very YUMMY...
