Pita Egg Pizzas: Healthy Snacks for Kids!
Schools out and my children are eager for new snack options! Now is a great time to utilize all these healthy food options (thanks Fresh Food Finder!) and be creative with the kids at the same time.
I’ve learned over the years that when the children are involved in making their snacks they not only learn how fun and easy healthy eating can be, but it gives us all time to bond. If you ask me, that is nothing but a win/win! My children and I had a blast working together in the kitchen and even more fun eating our confections. I guarantee even your pickiest eater will enjoy these fun twists on classic snacks. A few recipes you and the children can have fun assembling are listed below. Bon Appetite!
Pita Egg Pizzas: Healthy Breakfast for Kids!
Pita Egg Pizzas: ½ C. sliced fresh mushrooms 1/3 C. chopped green pepper 2 eggs beaten and scrambled/omelet 2 Tbsp. green onion 1 whole pita bread round, split in half horizontally ½ C. shredded reduced-fat cheddar cheese 1 C. Salsa or Pico de Gallo (optional)
Preheat oven to 375 degrees F. In a skillet combine mushrooms and green pepper. Let cook for 5 minutes or until green pepper is tender. Add green onion and beaten eggs. Let eggs cook (scramble or create omelet). Place pita bread on baking sheet. Put egg mixture on pita bread and place in oven for about 8 minutes. Take out of oven, sprinkle cheese on top and let stand for 1 minute. Cut pita bread into triangles and put salsa or pico de gallo on top.
My family LOVES breakfast foods and this was fun to make together. I gave each child a job. My oldest daughter, Raina, chopped the vegetables (with supervision, of course) and my other child, Reese, beat the eggs.
We all worked together in making sure the food cooked properly.
