Perfect Pumpkin Soup = Perfect Comfort FoodThis soup is easy to make, and pairs well with a piece of crusty bread, or whole grain crackers.

You will need:

1/4 cup of butter 1 yellow onion chopped 2 cloves of garlic minced 1 tsp curry powder 1 tsp salt 1/4 tsp coriander 1/8 tsp red pepper 3 cups low sodium vegetable broth 1 16 oz. can of pumpkin 1 cup of unsweetened almond milk

Then in a medium stockpot melt the butter, add in the onion and garlic cook until tender. Add seasonings and cook another minute. Next, add in the broth and bring to a low boil for 15-20 minutes. Add in the milk and the pumpkin and boil for 5 minutes. Garnish with roasted pumpkin seeds (optional) and enjoy!
