Paleo Plantain Apple Bacon Hash

Ingredients

4 slices of bacon- chopped into bite sized pieces 1 small apple – chopped 1 ripe plantain – sliced ¼ tsp Himalayan Salt ½ tsp cinnamon

Directions:

Cook the bacon in a skillet over medium heat. As the bacon browns add in the plantains and let them caramelize in the bacon fat. Add in the apples when the plantains soften. Lower the heat to medium -low and cover the pan allowing the apples to cook. Uncover and stir. Add in the cinnamon and salt, continue cooking and stir. When the apples are cooked through but not mushy, remove from heat and serve. (recipe adapted from paleorunningmomma)
