Paleo has become the newest trend in eating.  It's basic tenet is to eat the way the cavemen did. If they could hunt for it, or gather it they ate it. This meant wild game, wild caught fish, leafy greens and native fruits and vegetables. In today's terms it means focus on wild caught fish, grass fed meat, pastured meat and eggs. Eat plenty of vegetables and keep fruits, nuts and seeds to a minimum. Grains,cereal, pasta, sugar, and candy are big no-no's. Today, I am sharing a great breakfast that meets the requirements for Paleo. It's a delicious option for brunch.

Paleo Breakfast Casserole

You will need: 1 dozen organic eggs 1 large sweet potato –peeled and sliced to ¼ inch thickness ½ lb ground turkey – cooked & seasoned ½ cup spinach Himalayan Salt & Pepper to taste Coconut Oil to coat the casserole dish

Directions: Preheat the oven to 350 Grease a 9x9 baking pan with the coconut oil Layer the sweet potatoes on the bottom of the pan Top with ground turkey and then raw spinach leaves Whisk the eggs well and season with salt and pepper. Pour over the spinach, turkey and sweet potatoes. Bake for 40-45 minutes.
