This simple glaze transforms the already enticing carrot into an elegant side dish that goes beautifully with meats, poultry, grains, or legumes.


4  large carrots peeled and cut into ½-inch slices (about 5 cups)

1 teaspoon grated orange rind

¾ cup orange juice

1 ½  teaspoons unsalted butter

1 teaspoon honey

½ teaspoon ground ginger

¼ teaspoon salt

⅛ teaspoon black pepper


Combine the orange rind, orange juice, butter, honey, ginger, salt, and pepper in a 10-inch nonstick skillet, and bring to a boil. Place the carrots, lower the heat, and simmer, covered, for 5 minutes or until the carrots are slightly tender but still firm.

Reduce the liquid down to 3 tablespoon by raising the heat and boiling the mixture. Uncover and shake the pan frequently, for 5 minutes, until carrots are crisp-tender and nicely glazed.
