Mexican Quinoa Recipe

This quinoa dish is a perfect meatless Monday dinner option.  It's loaded with healthy fats, protein and fiber.

Mexican Quinoa

You will need:

1 tbsp olive oil

2 cloves of garlic minced

1 small onion diced

1 cup quinoa

1 cup vegetable broth

1 can black beans

1 can fire roasted diced tomatoes

1 cup corn

1 tsp chili powder

½ tsp cumin

Sea Salt & ground black pepper to taste

1 avocado halved, seeded, peeled, and diced

Juice of 1 lime

2 tbsp cilantro leaves chopped

 

Directions:

In a large skillet, warm the olive oil and add in the diced onion and garlic. Cook until the onion is tender, about 1-2 minutes.

Mix in the quinoa, vegetable broth, beans, tomatoes, corn, chili powder, and cumin. Add in salt and pepper to taste.  Bring to a boil; cover and turn down the heat. Simmer until the quinoa is cooked through, about 20 minutes.  Mix in the avocado, lime juice and cilantro.

Serve immediately.
