1 cored and thinly sliced medium-size head red cabbage (about 1 ¾ pounds)
2 peeled, cored, and grated medium-size granny smith apples (1 ½ cups)
2 tablespoons all purpose flour or gluten-free flour
1 tablespoon brown sugar
1 cup dry red wine
¼ teaspoon black pepper
Mix the cabbage, apples, sugar, flour, and pepper in a large enameled or stainless steel saucepan.*
Add wine and boil over high heat while stirring constantly. Lower the heat, cover, and simmer for 25 to 30 minutes or until the cabbage is tender. Stir occasionally and serve.
*Iron or aluminum will react with the cabbage and turn it brown.
