Garlic & Tahini Mashed Potatoes Ingredients

4 pounds red potatoes, peeled and cubed

4 cloves garlic, peeled

1/2 cup unsweetened cashew milk or unsweetened almond milk

1/4 cup lemon juice - about 1/2 of a fresh lemon

1/4 cup tahini

3 tablespoons butter cut into pats

3 teaspoons salt

1 teaspoon black pepper

Garlic & Tahini Mashed Potatoes Directions

Place cubed potatoes, whole garlic cloves, and 2 tspn salt in a pot. Fill with water to one inch above the potatoes. Bring to a boil and continue cooking at a slow boil until potatoes are tender, about 20 minutes. Test by gently pushing a potato cube against the side of the pot. It should crumble easily. Remove potatoes and garlic from water into a colander.

Place all of the ingredients into a large mixing bowl. Mix thoroughly with a hand mixer or a hand masher. If the potatoes are too thick add a little more cashew milk. Taste to see if you want to add more salt and/or pepper, bearing in mind that more can be added at the table to each person's taste. Mix to combine any added salt and pepper and serve.
