Delicious Egg Muffins Recipe
Breakfast is the most important meal of the day and sometimes it is the most overlooked meal of the day. We all need a quick and easy healthy breakfast we can eat on the run. These egg muffins are just the thing. They can be made the night before and will keep for about a week in the refrigerator.
Ingredients: 6 large organic eggs ½ cup of diced fresh tomato Handful of chopped fresh spinach 1 tbls of fresh grated Parmesan cheese
Directions: Pre-heat the oven to 350 degrees F Break the eggs into a small bowl and whisk to break the yolk. Then mix in the tomatoes and spinach. Pour evenly into a greased muffin tin. Top with a sprinkle of Parmesan cheese. Bake for 30 minutes.
