Nothing says Spring quite like a cucumber salad. This one is easy and perfect for those backyard gatherings.

Cucumber & Dill Salad

1 large cucumber - sliced in half then thinly sliced 1 half onion – thinly sliced 3 tbsp Plain Greek Yogurt 2 tsp Himalayan Salt 2 tsp fresh dill

Place the cucumber and onion slices in a bowl, add in the Greek Yogurt, and stir. Sprinkle with the salt to taste and stir in the dill. Chill for 15-20 minutes. (recipe adapted from The Simply Anchored Blog)
