I stumbled across these chocolate chip banana muffins and they are too delicious not to share. Best of all they are gluten free, contain no added refined sugars and whip up in minutes. Don't they sound decadent? Would you believe they are free of refined sugars and gluten?  Instead of using wheat flour, the recipe calls for oats.  Bananas provide the sweetness along with honey, making these are healthy alternative to a typical banana muffin with a cup of sugar.

They could not be any easier to make either. You only need two kitchen tools; a blender, and a muffin tin.

Ingredients:

2 very ripe bananas
2 large eggs
2 tbsp raw organic honey
2 cups of Oats
1/2 cup chocolate chips
1 cup of Greek plain yogurt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 pinch of Sea Salt
1/2 tsp pure vanilla extract
 
Directions:
Set aside the chocolate chips. In a blender, mix the rest of the ingredients until smooth. The blender may heat up the mix, if so, let it cool before adding the chocolate chips. The heat may melt them slightly. Once the mixture has cooled just a bit, pour it evenly into greased muffin tins. Then gently divide the chocolate chips up between the each muffin cups. Bake in a pre-heated 400 degree oven for 15 minutes or until browned on top. 
 
A batch of these muffins can whipped up in a morning as a quick lunch box treat, or a snack with your morning coffee. They are a bit chewier than a regular muffin, but they are delicious.  The basic batter will let you make several variations on these too. Trade out the chocolate chips for fresh blueberries, or cranberries. You could also add nuts to the batter and skip the chocolate, giving you banana nut muffins.
