I love me some avocado. It's an amazing food, with so many healthy benefits.  Avocados are a great source of healthy fats. They are loaded with fiber, and have more potassium than a banana. Their antioxidants help maintain eye health. They can help prevent cancer, lower cholesterol and  help you absorb more plant based nutrients. People that eat avocados also tend to be healthier. It's no wonder I am always looking for recipes to use them in. This TexMex dish won't disappoint.

 Chicken Avocado Wraps 

Ingredients:

2 cups cooked Shredded Chicken

½  cheddar cheese grated

1 avocado diced

2 roma tomatoes diced

2 tbsp cilantro chopped

4 large tortillas

1 tbsp coconut oil

Directions:

Mix the chicken, tomatoes, cheese, cilantro and avocado.

Lay a tortilla flat, and add ¼ of the mixture, roll and repeat the process until all four tortillas are full. Heat the coconut oil in a skillet, place the tortillas in the pan and cook for 2 minutes on both sides or until the tortillas turn golden brown. Serve warm.
