This black bean salad is a wonderful side dish for BBQ, Mexican, or Southwestern meals. It's super simple recipe to make, even your tweens can help with this one.
Black Bean Salad Recipe
You will need: 2 cans of black beans, rinsed and drained 1 can of corn niblets, rinsed and drained 3 roma tomatos diced 1 bell pepper seeded and diced 1 lime freshly squeezed 1/4 cup chopped cilantro 1/2 cup chopped red onion (optional) Salt and Pepper to taste
Directions: Place the beans, corn, tomatoes, and pepper in a large bowl Mix to combine. Drizzle in the lime juice and fold in the cilantro. Cover & Chill for 1-2 hours.
Serves 8 each serving is 1/2 cup 21 Day Fix = 1 yellow and 1/2 green.
