I LOVE avocados. They are so delicious. Even better, they are loaded with healthy fats that our bodies need.  I spotted this amazing alternative to chicken and steak quesadillas. It's perfect for Meatless Monday too! Avocado Quesadillas 1/2 avocado, 1 small roma tomato, diced 1 green onion, chopped Pinch of Sea Salt Salsa –for dipping 1 large tortilla

Mash avocado & spread on one side of the tortilla, top with diced tomato and chopped green onions. Fold the tortilla in half and place in a skillet on medium heat, toast lightly until warmed through. Recipe adapted from The Garden Grazer
