There’s nothing like a French fry, crispy on the outside with a soft tender filling inside. Fries are one of the toughest foods to give up and one of the worst for you. Still, occasionally you may want fries with that grass fed burger, or the chicken sandwich. Here’s a healthy alternative to a traditional French fry.

Avocado Fries

You will need:

2 large just ripe avocados, sliced (if they are too ripe they may be hard to work with, and under ripe they may be bitter)

½ of a lime juiced

Salt & pepper to taste

1 egg beaten

1 cup panko bread crumbs

2 tbsp Avocado Oil


Pre-heat oven to 400 degrees F.

Place one tbsp. of oil into a shallow baking pan and set aside.

Sprinkle the lime juice on the slices of avocado, so they won’t brown in the oven.

Set up three shallow plates for dredging, in one put the flour, next the egg, and lastly the panko breadcrumbs. Season the flour and panko.

Dip each slice of avocado into the flour, coat well, then dip into the egg mixture, coat well, and then dip into the panko breadcrumbs. Set aside. Continue until all the avocado slices are coated with panko.

Place them into the baking pan and then into the oven.

Bake for 15-20 minutes until they are crispy on the outside.

If you are not a fan of avocado, you can substitute zucchini, and use olive oil rather than avocado oil. (recipe adapted from Gimme Delicious)
